  • 8 oz egg noodles
  • 1 cup bell peppers, sliced (mixed colors)
  • 1 cup carrots, shredded
  • 4 green onions, chopped
  • 3 cloves garlic, minced
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp sriracha sauce (adjust to taste)
  • 1 tbsp sesame oil
  • 2 tbsp vegetable oil (for stir-frying)
  • 1 cup protein (chicken, shrimp, or tofu)

Instructions

  1. Wash and chop the bell peppers and carrots into bite-sized pieces. Mince the garlic finely.
  2. Boil water in a large pot. Cook egg noodles according to package instructions until al dente. Drain and rinse under cold water; set aside.
  3. In a large skillet or wok over medium-high heat, add vegetable oil. Once hot, add minced garlic followed by bell peppers and carrots. Sauté until slightly softened but still crunchy.
  4. Reduce heat slightly; add cooked noodles, soy sauce, and sesame oil to the pan. Stir gently to combine without breaking the noodles.
  5. Drizzle sriracha over everything and stir continuously for about 3 minutes until well-coated.
  6. Fold in chopped green onions just before serving for added freshness.
