- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 1 can (13.5 oz) full-fat coconut milk
- 1 cup creamy peanut butter
- 1/4 cup low-sodium soy sauce
- 2 tbsp fresh lime juice
- 1/4 cup brown sugar (light)
- 2 tbsp red curry paste
- 1 tbsp fresh ginger, grated
- Fresh cilantro (for garnish)
Instructions
- Trim excess fat from chicken breasts and cut into bite-sized pieces.
- In the crockpot, add chicken, garlic, coconut milk, peanut butter, soy sauce, brown sugar, red curry paste, lime juice, and ginger. Stir until well mixed.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is tender.
- About 30 minutes before serving, shred chicken in the crockpot using two forks.
- Garnish with cilantro and serve over rice or noodles.
