  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 (14 oz) cans diced tomatoes
  • 1 (13.5 oz) can full-fat coconut milk
  • 4 tablespoons unsalted butter
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 2 teaspoons garam masala
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Dice the chicken into bite-sized pieces and place them in the crockpot.
  2. Add minced garlic, grated ginger, diced tomatoes, coconut milk, butter, and spices to the crockpot. Stir until well combined.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. About 30 minutes before serving, taste and adjust seasonings as needed.
  5. Serve over rice or with naan bread and garnish with chopped cilantro.
