  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 2 tbsp cornstarch
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 2 tbsp honey
  • 3/4 cup roasted cashews
  • 2 green onions, chopped
  • 2 tbsp vegetable oil
  • 1 tsp fresh ginger, grated
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a skillet over medium heat. Sauté garlic and ginger for about 1 minute until fragrant.
  2. Add chicken breasts, seasoning with salt and pepper. Cook until golden brown on all sides (5-7 minutes).
  3. Transfer chicken to the crock pot. In a bowl, mix soy sauce, brown sugar, honey, cornstarch, and a splash of water; pour over chicken.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. About 30 minutes before serving, stir in cashews and green onions.
  6. Serve hot over rice or noodles.
