Ingredients
- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 3 cloves fresh garlic, minced
- 2 tbsp cornstarch
- 1/2 cup low-sodium soy sauce
- 1/4 cup brown sugar
- 2 tbsp honey
- 3/4 cup roasted cashews
- 2 green onions, chopped
- 2 tbsp vegetable oil
- 1 tsp fresh ginger, grated
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a skillet over medium heat. Sauté garlic and ginger for about 1 minute until fragrant.
- Add chicken breasts, seasoning with salt and pepper. Cook until golden brown on all sides (5-7 minutes).
- Transfer chicken to the crock pot. In a bowl, mix soy sauce, brown sugar, honey, cornstarch, and a splash of water; pour over chicken.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, stir in cashews and green onions.
