Description

  • 3 lbs chuck roast
  • 4 dried guajillo chiles
  • 2 dried pasilla chiles
  • 1 large onion, quartered
  • 6 garlic cloves
  • 2 tsp ground cumin
  • 2 cups low-sodium beef broth
  • Fresh cilantro, for serving
  • Lime wedges, for serving
  • 12 corn tortillas

Instructions

  1. Remove stems and seeds from guajillo and pasilla chiles. Soak them in hot water for about 20 minutes until softened.
  2. Blend soaked chiles with onion, garlic, cumin, and beef broth until smooth to create the marinade.
  3. Cut chuck roast into large chunks. Marinate the beef in the blended mixture for at least one hour (overnight is ideal).
  4. Transfer marinated beef into a Crock Pot and cook on low for 8 hours or high for 4 hours until tender.
  5. Shred the cooked beef using two forks.
  6. Warm corn tortillas on a skillet until slightly crispy but pliable. Fill each tortilla with shredded beef and top with cilantro and lime juice before enjoying.
