- 1 cup all-purpose flour
- ½ cup cornstarch
- 2 large eggs (lightly beaten)
- 1½ cups panko breadcrumbs
- ¾ cup mayonnaise
- ¼ cup sweet chili sauce
- 2 tbsp sriracha (adjust to taste)
- 2 tbsp low-sodium soy sauce
- 2 tbsp honey
- Juice of 1 lime
Instructions
- Slice chicken breasts into strips or bite-sized pieces for even cooking.
- Set up three bowls: one with seasoned flour (salt and pepper), one with beaten eggs, and one with panko mixed with cornstarch.
- Dredge chicken pieces in flour, then egg wash, and finally coat with the panko mixture.
- Heat enough oil in a skillet over medium heat to cover the bottom. Once hot, fry chicken until golden brown (4-5 minutes per side). Keep warm in a low oven.
- To make the Bang Bang sauce, mix mayonnaise, sweet chili sauce, sriracha, soy sauce, honey, and lime juice in a bowl until smooth.
