  • 34 lb boneless beef roast
  • 1 cup cranberry sauce (whole berry preferred)
  • 1/2 cup balsamic vinegar
  • 4 garlic cloves (minced)
  • 2 tbsp fresh rosemary (chopped)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, combine the cranberry sauce, balsamic vinegar, minced garlic, chopped rosemary, olive oil, salt, and pepper to create the marinade.
  2. Place the beef roast in a large zip-top bag and pour the marinade over it. Seal the bag and refrigerate for at least 4 hours or overnight.
  3. Preheat your oven to 350°F (175°C). Heat olive oil in an oven-safe skillet over medium-high heat and sear each side of the roast for 3-4 minutes until browned.
  4. Pour any leftover marinade over the roast and transfer it to the preheated oven. Roast for about 1 hour or until the internal temperature reaches 135°F (57°C) for medium-rare.
  5. Remove from oven and let rest for 15 minutes before slicing against the grain into thick pieces.
