  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar (light or dark)
  • 2 large eggs (room temperature)
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/3 cup unsalted butter (melted)
  • 1 tsp vanilla extract
  • Optional: 1/2 cup chopped walnuts or pecans

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large bowl, mash the ripe bananas until smooth with some lumps remaining.
  3. Stir in melted butter, granulated sugar, brown sugar, eggs, and vanilla until well combined.
  4. In another bowl, whisk together flour, baking soda, salt, and cinnamon.
  5. Gently fold the dry ingredients into the wet mixture until just combined; do not overmix.
  6. In a small bowl, mix additional sugar and cinnamon for the swirl filling.
  7. Pour half of the batter into the prepared pan and sprinkle half of the cinnamon mixture on top. Add the remaining batter followed by more cinnamon-sugar mixture.
  8. Bake for 60-65 minutes or until golden brown and a toothpick inserted into the center comes out clean.
  9. Allow cooling before slicing and serving.
