- 3–4 ripe bananas (mashed)
- 1/2 cup granulated sugar
- 1/2 cup brown sugar (light or dark)
- 2 large eggs (room temperature)
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 1/3 cup unsalted butter (melted)
- 1 tsp vanilla extract
- Optional: 1/2 cup chopped walnuts or pecans
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large bowl, mash the ripe bananas until smooth with some lumps remaining.
- Stir in melted butter, granulated sugar, brown sugar, eggs, and vanilla until well combined.
- In another bowl, whisk together flour, baking soda, salt, and cinnamon.
- Gently fold the dry ingredients into the wet mixture until just combined; do not overmix.
- In a small bowl, mix additional sugar and cinnamon for the swirl filling.
- Pour half of the batter into the prepared pan and sprinkle half of the cinnamon mixture on top. Add the remaining batter followed by more cinnamon-sugar mixture.
- Bake for 60-65 minutes or until golden brown and a toothpick inserted into the center comes out clean.
- Allow cooling before slicing and serving.
