- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 1 ripe mango, diced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2 green onions, thinly sliced
- 2 cloves garlic, minced
- 1 tsp fresh ginger, minced
- ¼ cup low-sodium soy sauce
- 2 tbsp honey or brown sugar (adjust to taste)
- 1 tbsp rice vinegar
Instructions
- Prep your ingredients by washing vegetables and dicing chicken into bite-sized pieces.
- In a small bowl, whisk together soy sauce, honey or brown sugar, rice vinegar, garlic, and ginger. Set aside.
- Heat oil in a large pan or wok over medium-high heat until shimmering.
- Add chicken to the pan in one layer and cook for about 5-7 minutes until golden brown.
- Remove chicken and stir-fry the bell peppers and green onions for about 3-4 minutes until softened but still crisp.
- Add diced mango and cooked chicken back to the pan. Pour the sauce over everything and stir well until heated through.
