Ingredients

Scale
  • 2 lbs beef chuck roast
  • 4 dried ancho chilies
  • 4 garlic cloves
  • 1 medium onion, sliced
  • 2 tsp ground cumin
  • 3 cups low-sodium beef broth
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Remove stems and seeds from the dried ancho chilies. Toast in a dry skillet over medium heat for 2-3 minutes until fragrant.
  2. Blend toasted chilies with garlic, onion, cumin, salt, pepper, and 1 cup of beef broth until smooth.
  3. Heat olive oil in a large pot over medium-high heat. Season beef with salt and pepper, then sear on all sides (about 4-5 minutes per side).
  4. Pour the chili sauce over the beef and add remaining broth until just covered.
  5. Cover the pot, reduce heat to low, and simmer for 2-3 hours until the beef is fork-tender.
  6. Shred or cube beef before serving with rice or tortillas; garnish with fresh cilantro if desired.
