  • 2 medium zucchinis, sliced thinly
  • 8 oz fresh mushrooms (button or shiitake), sliced
  • 1 tablespoon fresh ginger, grated
  • 4 cloves garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 2 teaspoons honey or brown sugar
  • 1 tablespoon cornstarch
  • Red pepper flakes (optional)

Instructions

  1. Prepare all ingredients: Cut chicken, slice zucchini and mushrooms.
  2. Heat a wok or large pan over medium-high heat. Add sesame oil.
  3. Cook chicken until golden brown (5-7 minutes).
  4. Add garlic and ginger; stir for 30 seconds until fragrant.
  5. Toss in zucchini and mushrooms; stir-fry for about 3-4 minutes until tender but crisp.
  6. In a bowl, mix soy sauce, honey/brown sugar, cornstarch, and red pepper flakes if using. Pour over the stir-fry.
  7. Cook for an additional minute until the sauce thickens slightly. Serve hot over rice or noodles.
