  • 2 large eggs, beaten
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • Freshly cracked black pepper to taste

Instructions

  1. Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add diced chicken and sauté until golden brown (5-7 minutes).
  2. Stir in diced carrots and minced garlic; cook for another 3 minutes until carrots soften.
  3. Add cooked rice, green peas, and soy sauce; stir-fry everything together for about 5 minutes until heated through and crispy.
  4. Push mixture aside and scramble the beaten eggs in the pan until fully cooked. Incorporate eggs into the rice mixture.
  5. Finish by adding chopped green onions and drizzle with sesame oil; stir well for an additional minute before serving.
