  • 4 boneless, skinless chicken breasts
  • 1 (12 oz) package stuffing mix
  • 2 cups low-sodium chicken broth
  • 1 medium onion, diced
  • 1 cup celery, finely chopped
  • 1/2 cup butter, melted
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Sauté diced onion and celery in melted butter over medium heat until softened.
  3. In a bowl, combine sautéed vegetables with stuffing mix, garlic powder, fresh herbs, and chicken broth.
  4. Season chicken breasts with salt and pepper; place in a greased baking dish.
  5. Spoon stuffing underneath and on top of each chicken breast.
  6. Bake for 30-35 minutes until chicken reaches an internal temperature of 165°F (75°C) and stuffing is golden brown.
