- 1 cup ricotta cheese (whole milk)
- 1 cup fresh mozzarella cheese, shredded

- 1/4 cup fresh basil, chopped
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions

- Slice the eggplants lengthwise, sprinkle with salt, and let sit for 20 minutes to draw out moisture.
- Rinse and pat dry the eggplant slices.
