  • 2 medium eggplants, sliced lengthwise
  • 1 cup ricotta cheese (whole milk)
  • 1 cup fresh mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 2 cups marinara sauce (homemade or store-bought)
  • 1/4 cup fresh basil, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the eggplants lengthwise, sprinkle with salt, and let sit for 20 minutes to draw out moisture.
  3. Rinse and pat dry the eggplant slices.
  4. In a bowl, combine ricotta cheese, chopped basil, grated Parmesan, salt, and pepper.
  5. Lay an eggplant slice flat, spoon filling at one end, and roll tightly. Repeat for all slices.
  6. Spread marinara sauce in a baking dish. Place rollatini seam-side down and top with more marinara and mozzarella.
