  • 1/2 cup freshly squeezed calamansi juice
  • 1 can (14 oz) sweetened condensed milk
  • 3 large egg yolks
  • 1 pre-made graham cracker crust (9-inch)
  • 1 cup whipped cream (for topping)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. If making your own crust, crush graham crackers into fine crumbs and mix with melted butter, then press into a pie pan. Bake for 8-10 minutes until golden. Let cool.
  3. In a bowl, whisk together calamansi juice, sweetened condensed milk, and egg yolks until smooth.
  4. Pour the filling into the cooled crust, gently tapping the pan to remove air bubbles.
  5. Bake for 15-20 minutes until set but slightly jiggly in the center. Cool at room temperature before chilling in the fridge for at least 3 hours.
  6. Serve chilled with a dollop of whipped cream on top.
