  • 1 cup heavy cream (or half-and-half)
  • 4 cups low-sodium vegetable broth
  • 2 green onions, chopped (for garnish)
  • 2 tbsp olive oil

Instructions

  1. Prepare your ingredients by washing and peeling the potatoes. Dice them into bite-sized pieces. Chop the onion, celery, and bell pepper finely.
  2. In a large pot over medium heat, add olive oil and sauté the onions, garlic, celery, and bell pepper for about 5 minutes until softened.

  5. Incorporate Cajun seasoning and stir in heavy cream until fully blended.
