  • 4 large bell peppers (any color)
  • 2 cups cooked shredded chicken (preferably rotisserie)
  • 1/2 cup buffalo sauce
  • 4 oz cream cheese (softened)
  • 1 cup shredded cheddar cheese
  • 2 green onions (chopped)
  • 1 tsp garlic powder
  • 1 tsp onion powder

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove the seeds. Place them upright in a baking dish.
  3. In a large bowl, mix the shredded chicken, buffalo sauce, cream cheese, garlic powder, onion powder, and half of the cheddar cheese until well combined.
  4. Generously fill each pepper with the chicken mixture.
  5. Top with remaining shredded cheese and cover with foil. Bake for 25 minutes.
  6. Remove from the oven, garnish with chopped green onions, and serve warm.
