  • 8 oz elbow macaroni
  • 2 cups sharp cheddar cheese, shredded
  • 2 cups whole milk
  • 4 tbsp salted butter
  • 4 tbsp all-purpose flour
  • 1 cup panko breadcrumbs
  • Salt, pepper, and 1 tsp paprika (to taste)

Instructions

  1. Cook elbow macaroni in salted boiling water until al dente; drain and reserve some pasta water.
  2. In a saucepan, melt butter over medium heat. Stir in flour to form a roux and cook until golden.
  3. Gradually whisk in milk; cook until thickened. Stir in cheddar cheese until melted. Season with salt, pepper, and paprika.
  4. Combine the macaroni and brisket with the cheese sauce. If too thick, add reserved pasta water as needed.
  5. Transfer to a greased baking dish, top with panko breadcrumbs, and bake at 350°F (175°C) for about 25 minutes until golden brown.
