  • 1/2 cup balsamic vinegar
  • 2 tbsp extra virgin olive oil
  • 3 cloves fresh garlic, minced
  • 2 cups low-sodium vegetable broth
  • 1 cup orzo pasta
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, thinly sliced
  • 1/4 cup fresh basil, chopped
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Drizzle olive oil over chicken breasts and season generously with salt and pepper. Set aside.
  2. In a large skillet over medium heat, add olive oil and sauté minced garlic until fragrant. Add sliced bell peppers and zucchini; cook until tender-crisp.
  3. Pour balsamic vinegar over the veggies and reduce slightly.
  4. In another pot, boil vegetable broth and cook orzo according to package instructions (about 8-10 minutes).
  5. Drain the orzo, then mix it with sautéed veggies and balsamic sauce in the skillet. Stir in chopped basil before serving.
