  • 3/4 cup granulated sugar (150g)
  • 3/4 cup brown sugar, packed (165g)
  • 2 large eggs
  • 1 1/2 cups diced apples (about 2 medium apples)
  • 1/4 cup cinnamon sugar mixture (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time until fully combined.
  4. In another bowl, whisk together flour, baking powder, cinnamon, and salt; gradually add this mixture to the wet ingredients.
  5. Gently fold in the diced apples.
  6. Chill the dough in the refrigerator for at least 30 minutes.
  7. Scoop rounded balls of dough onto prepared baking sheets and roll each in cinnamon sugar.
  8. Bake for 10-12 minutes or until edges are golden but centers remain soft. Cool on a wire rack.
