  • 4 oz pancetta, diced
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 28 oz canned San Marzano tomatoes
  • 1 cup dry red wine
  • 1 cup low-sodium beef broth
  • 2 tsp Italian seasoning
  • ½ cup milk or cream
  • Pasta of choice (tagliatelle recommended)

Instructions

  1. Set your Instant Pot to sauté mode. Cook diced pancetta until crispy. Add ground beef and brown it, breaking it apart with a spatula.
  2. Toss in chopped onions and minced garlic; sauté until onions are translucent (about 3-5 minutes).
  3. Pour in canned tomatoes with juices, followed by red wine. Scrape any bits stuck to the pot for added flavor.
  4. Stir in Italian seasoning and beef broth until well combined.
  5. Secure the lid and set to manual pressure cook on high for 25 minutes. Allow natural pressure release for about 10 minutes before manually releasing any remaining pressure.
  6. Open the lid carefully and stir in milk or cream until incorporated. Adjust seasonings if necessary before serving over your favorite pasta.
