  • 1 lb sirloin steak strips
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup heavy cream
  • 2 green onions, chopped
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Add seasoned steak strips and cook until browned on all sides. Remove from heat.
  2. In a pot, combine rice with 2 cups water and a pinch of salt. Bring to a boil, then reduce heat and simmer until fluffy (about 15 minutes).
  3. In a saucepan, combine heavy cream and half of the cheddar cheese over low heat, stirring continuously until melted and smooth.
  4. Fold cooked rice into the queso sauce until well-coated. Gently mix in sautéed steak strips.
  5. Serve topped with remaining cheddar cheese and garnish with chopped green onions.
