  • 4 medium sweet potatoes (about 1.5 lbs)
  • 2 cups fresh spinach
  • 8 oz cremini or button mushrooms, chopped
  • 4 oz cream cheese, softened
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Wash the sweet potatoes thoroughly and pierce each several times with a fork.
  2. Place sweet potatoes on a baking sheet lined with parchment paper. Roast for 45-60 minutes until tender.
  3. While the potatoes roast, heat olive oil in a skillet over medium heat. Add minced garlic and chopped mushrooms; sauté for about 5 minutes until soft.
  4. Stir in fresh spinach until wilted, then add cream cheese and mix until creamy.
  5. Season filling with salt and pepper to taste. For extra heat, add red pepper flakes if desired.
  6. Once cool enough to handle, slice the sweet potatoes lengthwise and fluff the insides with a fork. Spoon in the creamy filling generously.
