  • 1 can (15 oz) kidney beans, rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1 cup bell peppers, diced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onions and cook until translucent.
  2. Stir in minced garlic and cook for another 30 seconds until fragrant.
  3. Add ground turkey to the pot; cook until browned, breaking it apart as it cooks (about 5-7 minutes).
  4. Mix in diced bell peppers, rinsed beans, and diced tomatoes; stir well.
  5. Season with chili powder, cumin, salt, and pepper; combine thoroughly.
  6. Pour in about 2 cups of water or broth to achieve desired consistency. Bring to a boil then reduce heat to low. Simmer uncovered for at least 30 minutes.
