- 1 cup bell peppers, diced
- 2 tbsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onions and cook until translucent.
- Stir in minced garlic and cook for another 30 seconds until fragrant.
- Add ground turkey to the pot; cook until browned, breaking it apart as it cooks (about 5-7 minutes).
- Mix in diced bell peppers, rinsed beans, and diced tomatoes; stir well.
- Season with chili powder, cumin, salt, and pepper; combine thoroughly.
- Pour in about 2 cups of water or broth to achieve desired consistency. Bring to a boil then reduce heat to low. Simmer uncovered for at least 30 minutes.
