  • 4 cups low-sodium vegetable broth
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes (with juice)
  • 2 tsp ground cumin
  • 1 tsp chili powder (adjust to taste)
  • 1 cup tortilla strips (homemade or store-bought)
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime

Instructions

  1. Prep your ingredients by chopping the onions and mincing the garlic.
  2. In a large pot over medium heat, heat 2 tbsp olive oil. Add chopped onions and sauté until softened and golden brown.
  3. Stir in minced garlic, cumin, and chili powder; cook until fragrant (about 1 minute).
  4. Add the vegetable broth, rinsed lentils, and diced tomatoes to the pot. Stir well and bring to a gentle boil.
  5. Reduce heat to low, partially cover, and simmer for about 30 minutes or until lentils are tender but not mushy.
  6. Stir in lime juice and chopped cilantro just before serving. Adjust seasoning to taste.
