- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 1 cup Greek yogurt (full-fat)
- 1 cucumber, grated
- Juice of 1 lemon
- 2 tsp dried oregano (or 2 tbsp fresh)
- 4 pita breads
- 3 tbsp extra virgin olive oil
- Salt & pepper to taste
Instructions
- Marinate the chicken: In a bowl, mix olive oil, garlic, oregano, salt, pepper, and lemon juice. Add chicken and coat well. Let it marinate for at least 30 minutes.
- Prepare tzatziki sauce: Combine Greek yogurt, grated cucumber, and a splash of lemon juice in another bowl. Season with salt and pepper; set aside.
- Grill the chicken: Preheat the grill to medium-high heat. Cook marinated chicken for about 6-7 minutes per side until golden brown and fully cooked.
- Warm the pita bread: Wrap pita in foil and place on the grill's edge for about 5 minutes until warmed.
- Slice and assemble gyros: Thinly slice grilled chicken against the grain. Layer on warm pita with tzatziki sauce and your choice of veggies.
