  • 4 boneless, skinless chicken breasts
  • 1 cup fresh parsley, chopped
  • 1/4 cup red wine vinegar
  • 4 garlic cloves, minced
  • 1/2 cup extra virgin olive oil
  • 1 tsp red pepper flakes (adjust to taste)
  • Salt and pepper to taste
  • 4 cups mixed greens (spinach, kale, or your favorite)
  • 1/2 cup sour cream or Greek yogurt

Instructions

  1. Preheat grill to medium-high heat (400°F/200°C).
  2. In a bowl, combine parsley, garlic, red wine vinegar, olive oil, red pepper flakes, salt, and pepper to create the chimichurri marinade.
  3. Marinate chicken in half of the chimichurri for at least 30 minutes in the fridge.
  4. Grill chicken for 6-7 minutes per side until it reaches an internal temperature of 165°F (75°C).
  5. While the chicken cooks, wash greens and place them in a large bowl.
  6. Mix sour cream or Greek yogurt with minced garlic and salt to create the creamy garlic delight.
  7. Slice grilled chicken and layer over greens; drizzle with remaining chimichurri and add a dollop of creamy garlic delight.
