- 1 cup sharp cheddar cheese, shredded
- ½ cup sour cream
- 1 cup pico de gallo
- ¼ cup jalapeños, sliced (fresh or pickled)
- 1 tbsp taco seasoning
- Juice of 1 lime
- Oil for frying
Instructions
- 1. Wash and peel the potatoes. Cut into ½-inch thick fries and soak them in cold water for at least 30 minutes.
- 2. Heat oil in a deep fryer or pot to 350°F (175°C). Fry the soaked fries in batches until golden brown (5-7 minutes). Drain on paper towels.
- 3. While fries are frying, grill the carne asada over high heat for about 4-5 minutes per side until cooked through. Let it rest before slicing thinly against the grain.
- 4. On a platter, layer hot fries with shredded cheddar cheese to melt. Top with sliced carne asada.
- 5. Drizzle lime juice and add dollops of sour cream, pico de gallo, and jalapeños before serving.
