  • 2 large Russet potatoes (about 1 lb)
  • 8 oz carne asada (flank or skirt steak)
  • 1 cup sharp cheddar cheese, shredded
  • ½ cup sour cream
  • 1 cup pico de gallo
  • ¼ cup jalapeños, sliced (fresh or pickled)
  • 1 tbsp taco seasoning
  • Juice of 1 lime
  • Oil for frying

Instructions

  1. 1. Wash and peel the potatoes. Cut into ½-inch thick fries and soak them in cold water for at least 30 minutes.
  2. 2. Heat oil in a deep fryer or pot to 350°F (175°C). Fry the soaked fries in batches until golden brown (5-7 minutes). Drain on paper towels.
  3. 3. While fries are frying, grill the carne asada over high heat for about 4-5 minutes per side until cooked through. Let it rest before slicing thinly against the grain.
  4. 4. On a platter, layer hot fries with shredded cheddar cheese to melt. Top with sliced carne asada.
  5. 5. Drizzle lime juice and add dollops of sour cream, pico de gallo, and jalapeños before serving.
