  • 2 cups fresh cranberries
  • 1 cup granulated sugar
  • 1/2 cup brown sugar (light)
  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter (cold, cubed)
  • 1 cup rolled oats
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8-inch baking dish.
  2. In a bowl, mix cranberries with granulated sugar and vanilla extract until well coated.
  3. In another bowl, combine flour, oats, brown sugar, baking powder, and salt. Cut in cold butter until crumbly.
  4. Press half of the crumble mixture into the bottom of the prepared dish. Spread cranberry mixture evenly over it.
  5. Top with remaining crumble mixture. Bake for 35-40 minutes or until golden brown.
  6. Allow to cool completely before slicing into squares.
