- 1 can (14.5 oz) diced tomatoes
- 4 cups vegetable broth

- 3 cloves garlic, minced
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1/2 tsp ground cinnamon
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh cilantro or parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onions and minced garlic, sauté until softened (about 5 minutes).
- Stir in diced sweet potatoes, carrots, and zucchini. Cook for an additional 8 minutes until they begin to soften.
- Add chickpeas and canned tomatoes (crushing them if whole), stirring to combine.
- Sprinkle in cumin, coriander, cinnamon, salt, and pepper; mix well.
- Pour in vegetable broth until all ingredients are submerged. Bring to a boil then reduce heat to simmer for 20-25 minutes.
- Just before serving, stir in freshly chopped cilantro or parsley.
