  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 medium sweet potatoes, diced
  • 2 medium carrots, sliced
  • 1 medium zucchini, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh cilantro or parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onions and minced garlic, sauté until softened (about 5 minutes).
  2. Stir in diced sweet potatoes, carrots, and zucchini. Cook for an additional 8 minutes until they begin to soften.
  3. Add chickpeas and canned tomatoes (crushing them if whole), stirring to combine.
  4. Sprinkle in cumin, coriander, cinnamon, salt, and pepper; mix well.
  5. Pour in vegetable broth until all ingredients are submerged. Bring to a boil then reduce heat to simmer for 20-25 minutes.
  6. Just before serving, stir in freshly chopped cilantro or parsley.
