  • 8 oz spaghetti or penne pasta
  • 2 cups fresh spinach, roughly chopped
  • 1 cup cherry tomatoes, halved
  • 3 garlic cloves, minced
  • 3 tbsp extra virgin olive oil
  • 1/2 cup freshly grated Parmesan cheese
  • Salt and pepper to taste
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. In a large pot of salted boiling water, cook the pasta until al dente according to package instructions. Drain and reserve some pasta water.
  2. In a large skillet over medium heat, heat olive oil. Add minced garlic and sauté for 30 seconds before adding halved cherry tomatoes. Cook until softened.
  3. Stir in the spinach along with salt, pepper, and red pepper flakes. Cook until spinach wilts (about 2-3 minutes).
  4. Add drained pasta to the skillet with the vegetables, tossing to combine. If needed, add reserved pasta water for desired consistency.
  5. Sprinkle freshly grated Parmesan over the pasta and mix well.
  6. Plate immediately and garnish with extra cheese or herbs if desired.
