  • 1 lb dried navy beans (soaked overnight)
  • 6 oz smoked bacon (diced)
  • 1 medium onion (finely chopped)
  • 1/2 cup unsulfured molasses
  • 1/4 cup brown sugar
  • 2 tbsp Dijon mustard
  • Salt and pepper to taste
  • 4 cups water or chicken broth

Instructions

  1. Rinse soaked navy beans under cold water.
  2. In a large pot, cook diced bacon over medium heat until crispy. Remove bacon and set aside.
  3. Sauté onions in the bacon fat until translucent (about 5 minutes).
  4. Stir in molasses, brown sugar, Dijon mustard, salt, and pepper until well combined.
  5. Add the soaked beans and enough water/broth to cover by two inches. Bring to a boil, then reduce heat to low.
  6. Let simmer for about 2 hours.
  7. Preheat oven to 300°F (150°C). Transfer mixture to a baking dish or Dutch oven.
  8. Bake uncovered for about 3 hours until bubbly and thickened.
