- 28 oz canned crushed tomatoes
- 1 cup red wine
- 2 tsp dried oregano
- 2 tsp dried basil
- Salt and pepper to taste
Instructions
- Preheat your oven to 325°F (160°C).
- In a large Dutch oven, heat olive oil over medium-high heat. Sear the chuck roast on all sides until browned (4-5 minutes per side). Remove and set aside.
- Add onions, garlic, carrots, and celery to the pot; sauté until onions are translucent (about 5 minutes).
- Deglaze with red wine, scraping the brown bits from the bottom; simmer for 2-3 minutes.
- Stir in crushed tomatoes, oregano, and basil. Return the roast to the pot.
- Cover and transfer to the oven; braise for about 3 hours or until fork-tender.
