  • 3 lbs chuck roast
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 3 medium carrots, chopped
  • 2 stalks celery, chopped
  • 28 oz canned crushed tomatoes
  • 1 cup red wine
  • 2 tsp dried oregano
  • 2 tsp dried basil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a large Dutch oven, heat olive oil over medium-high heat. Sear the chuck roast on all sides until browned (4-5 minutes per side). Remove and set aside.
  3. Add onions, garlic, carrots, and celery to the pot; sauté until onions are translucent (about 5 minutes).
  4. Deglaze with red wine, scraping the brown bits from the bottom; simmer for 2-3 minutes.
  5. Stir in crushed tomatoes, oregano, and basil. Return the roast to the pot.
  6. Cover and transfer to the oven; braise for about 3 hours or until fork-tender.
  7. Serve with crusty bread to soak up the flavorful sauce!
