  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 1 cup salsa verde
  • 1 cup shredded pepper jack cheese
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • 2 tbsp fresh lime juice
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat. Pat chicken breasts dry.
  2. In a small bowl, mix olive oil, garlic powder, cumin, salt, pepper, and lime juice. Rub the mixture on each chicken breast.
  3. Grill chicken for 6-7 minutes on each side until cooked through (internal temperature of 165°F).
  4. Remove from grill and top with salsa verde followed by pepper jack cheese.
  5. Close the lid for 2-3 minutes until cheese melts.
