  • 34 boneless skinless chicken breasts (1.5 lbs)
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tbsp curry powder
  • 1 tbsp fresh ginger, grated
  • 4 garlic cloves, minced
  • 2 bell peppers, diced
  • 1 medium yellow onion, diced
  • 1 cup low-sodium vegetable broth
  • Juice of 1 lime
  • Fresh cilantro for garnish

Instructions

  1. Chop chicken into bite-sized pieces and dice bell peppers and onion. Peel and grate fresh ginger.
  2. Layer chicken in the bottom of the crockpot, followed by onion, garlic, ginger, bell peppers, and curry powder.
  3. Pour in coconut milk and vegetable broth gently over the mixture.
  4. Cook on low for 6-8 hours or high for 3-4 hours until chicken is tender.
  5. About 30 minutes before serving, stir in fresh lime juice to brighten flavors.
  6. Serve over rice or noodles, garnished with fresh cilantro.
