  • 1 cup black beans, rinsed
  • 1 cup sweet corn (fresh or frozen)
  • 2 jalapeños, diced (seeds removed for milder flavor)
  • 1 cup shredded cheddar cheese
  • 10 egg roll wrappers
  • 2 tbsp olive oil (for brushing)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix the shredded chicken, black beans, corn, jalapeños, and cheddar cheese until well combined.
  3. Place about 2 tablespoons of filling in the center of each egg roll wrapper. Roll tightly by folding in the sides first and then rolling from the bottom.
  4. Moisten the edges with water to seal.
  5. Brush each egg roll with olive oil and arrange them on the baking sheet.
  6. Bake for 20-25 minutes or until golden brown and crispy, flipping halfway through.
