  • 6 cloves fresh garlic, roasted
  • ½ cup unsalted butter
  • 1 cup heavy cream (or milk)

Instructions

  1. Boil peeled and chopped potatoes in salted water until fork-tender (15-20 minutes). Drain well.
  2. While potatoes boil, wrap garlic cloves in foil with olive oil and roast at 400°F (200°C) for 20-25 minutes.
  3. Return drained potatoes to low heat to evaporate excess moisture. Mash until smooth.
  4. Mix in butter while warm, followed by heavy cream until desired consistency is reached.
  5. Season with salt, pepper, and squeeze in roasted garlic. Mix well.
  6. Serve hot, garnished with chives if desired.
