- 1 medium yellow onion, diced

- 4 cups low-sodium chicken broth (about 960ml)
- 1 cup heavy cream (about 240ml)
- Salt and pepper to taste
- 1 tsp dried thyme
- 2 bay leaves
Instructions

- Gradually stir in heavy cream while mashing some potatoes against the pot's side for thickness. Season with salt and pepper.
