  • 4 cups Russet or Yukon Gold potatoes, diced (about 800g)
  • 6 slices thick-cut bacon, chopped (about 180g)
  • 1 medium yellow onion, diced
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth (about 960ml)
  • 1 cup heavy cream (about 240ml)
  • Salt and pepper to taste
  • 1 tsp dried thyme
  • 2 bay leaves

Instructions

  1. Cook the bacon in a large pot over medium heat until crispy. Remove and set aside while leaving the drippings in the pot.
  2. In the same pot, sauté the onions and celery in the bacon grease until softened (5-7 minutes). Add garlic and cook until fragrant.
  3. Stir in the diced potatoes and pour in the chicken broth. Bring to a boil, then reduce heat to simmer until potatoes are tender (15-20 minutes).
  4. Gradually stir in heavy cream while mashing some potatoes against the pot's side for thickness. Season with salt and pepper.
  5. Mix in the cooked bacon just before serving. Garnish with fresh herbs if desired.
