  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 8 oz elbow macaroni
  • 2 cups sharp cheddar cheese, grated
  • 2 cups whole milk
  • 4 tbsp unsalted butter
  • ¼ cup all-purpose flour
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Dice the chicken breasts into bite-sized cubes and season with salt and pepper.
  2. Cook the elbow macaroni according to package instructions until al dente; drain and set aside.
  3. In a large skillet, melt 2 tbsp butter over medium heat. Add the chicken and sauté until golden brown, about 6-8 minutes.
  4. In the same skillet, add remaining butter, then whisk in flour to create a roux. Gradually pour in milk, whisking until smooth and bubbly.
  5. Stir in grated cheddar cheese until melted. Mix in cooked pasta and sautéed chicken until well coated.
  6. (Optional) Transfer to a greased baking dish, top with more cheese, and bake at 350°F (175°C) for about 15 minutes until bubbly.
