  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 2 cups fresh broccoli florets
  • 1 cup orzo pasta
  • 1 cup heavy cream
  • 3 garlic cloves, minced
  • 1 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1 tsp dried oregano

Instructions

  1. Prepare all ingredients: chop chicken into bite-sized pieces and rinse broccoli florets.
  2. Heat olive oil in a large skillet over medium heat. Add chicken pieces, season with salt and pepper, and cook until golden brown.
  3. Stir in minced garlic and sauté for about 1 minute until fragrant.
  4. Add broccoli florets and cook until bright green but still crisp.
  5. Stir in uncooked orzo and enough water or broth to cover by an inch. Bring to a boil, then reduce to a simmer. Cook until orzo is al dente.
  6. Lower heat, stir in heavy cream and Parmesan cheese until melted and creamy. Adjust seasoning as needed.
  7. Serve hot, garnished with extra cheese or fresh herbs if desired.
