- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 2 medium carrots, diced
- 2 stalks celery, diced
- 4 cups fresh spinach
- 6 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 2 tsp Italian seasoning
- 2 tbsp extra virgin olive oil
- Juice of 1 lemon
Instructions
- In a large pot over medium heat, warm the olive oil. Add the chopped onions, garlic, carrots, and celery; sauté until the onions are translucent and fragrant.
- Add the chicken breasts to the pot and sear them until browned on both sides (about 5 minutes). Pour in the chicken broth until the chicken is submerged.
- Stir in the diced tomatoes and Italian seasoning; season with salt and pepper. Bring to a gentle boil and then reduce to simmer for about 20 minutes.
- Once cooked through (no longer pink), shred the chicken directly in the pot with two forks. Add fresh spinach and stir until wilted.
