  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 4 cups fresh spinach
  • 6 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 tsp Italian seasoning
  • 2 tbsp extra virgin olive oil
  • Juice of 1 lemon

Instructions

  1. In a large pot over medium heat, warm the olive oil. Add the chopped onions, garlic, carrots, and celery; sauté until the onions are translucent and fragrant.
  2. Add the chicken breasts to the pot and sear them until browned on both sides (about 5 minutes). Pour in the chicken broth until the chicken is submerged.
  3. Stir in the diced tomatoes and Italian seasoning; season with salt and pepper. Bring to a gentle boil and then reduce to simmer for about 20 minutes.
  4. Once cooked through (no longer pink), shred the chicken directly in the pot with two forks. Add fresh spinach and stir until wilted.
  5. Squeeze lemon juice into the soup just before serving for a bright finish. Serve hot with crusty bread.
