  • 1 lb smoked kielbasa, sliced
  • 4 medium Yukon Gold potatoes, diced (about 4 cups)
  • 1 large yellow onion, chopped
  • 2 medium carrots, sliced
  • 2 stalks celery, chopped
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Prep all vegetables: chop onions, carrots, celery, and dice potatoes.
  2. In a large pot over medium heat, add olive oil. Sauté onions, carrots, and celery for 5-7 minutes until tender.
  3. Stir in sliced kielbasa and cook for an additional 5 minutes until browned.
  4. Add chicken broth and diced potatoes. Bring to a gentle simmer for about 20 minutes or until the potatoes are fork-tender.
  5. Season with thyme, bay leaves, salt, and pepper. Simmer for another 5 minutes.
  6. Remove from heat and stir in heavy cream before serving.
