  • 3 cloves fresh garlic, minced
  • 1 medium onion, chopped
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 6 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 16 oz store-bought gnocchi
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 2 cups fresh spinach or kale

Instructions

  1. Prep your ingredients by rinsing and chopping vegetables.
  2. In a large pot over medium heat, sauté the onion in olive oil until golden brown. Add garlic and cook for an additional minute.
  3. Stir in carrots and celery; cook until slightly softened.
  4. Add chicken breasts along with thyme and oregano; mix well.
  5. Pour in the chicken broth to cover the chicken completely and bring to a simmer.
  6. Cook for about 20 minutes or until the chicken is no longer pink inside. Remove the chicken, shred it with forks, and return it to the pot.
  7. Stir in heavy cream until combined.
  8. Add gnocchi and cook according to package instructions (usually about 3-5 minutes).
  9. Just before serving, stir in spinach or kale until wilted.
